			<content:encoded><![CDATA[<p>There are so many options for places to stay and eat on a Copper Canyon excursion. What we do is to find the really cool local places and then to plan our trips to be sure and include them.</p>
<p>Hotels like in the video above in Chihuahua City- an old<a href="http://en.wikipedia.org/wiki/Luis_Terrazas"> historic mansion </a>that is filled with Pancho Villa era pieces. The hospitality is supreme.</p>

<p>Eateries like Estelas Place in<a href="http://www.mexicoguru.com/creel.php"> Creel</a>&#8230;.I have actually never met another person in the Copper area who knows of this place. It is truly local. No menu, no prices, no English. Just good food. Manuela is there early in the morning with a fire ready and some coffee going. The food is simple and hearty and what is on the stove (wood stove) is what you get.</p>

<p>The unique foods of the Norteño area and Copper Canyon include the lovely and fragrant squash blossoms&#8230;.flor de calabacitas. They are harvested in the late summer time when the rains push the brown/tan valleys and mountains into a verdant miracle.</p>
<p>The Fall is a great time for<a href="http://bluecornexpress.com/"> The Blue Corn Express culinary trip </a>for many reasons&#8230;one of which is that we can enjoy this culinary delight.</p>
<p>The aroma is light as these yellow flowers are gathered in baskets early in the day. Their use is in canned vegetables, with eggs, in soups &#8230;anywhere you want a light addition to a flavorful dish.</p>

(We have just posted a video of this new offering on <a href="http://www.youtube.com/watch?v=d0HMkwLJdMw">youtube- take a look!)</a></p>
<p>I am contacting chefs and schools who offer cooking classes around the country and the idea is for these innovative chefs to offer this exciting new trip to their clients- a real business builder.</p>
<p>The core idea of the “Blue Corn Express” is to give you an excellent Mexican cooking experience right in one of the world’s unique food spots. We will offer options of a session at a chef’s school in Chihuahua City, lots of experiences in local kitchens and off-the-path restaurants and homes in the Sierra Madres, as well as the incredible experience on the world renowned train through Copper Canyon.</p>
